Malagasy Recipe: Coconut Chicken
This came from one of our missionary friends, Kristy, who also lives on the island...
Ingredients:
1/2 cup diced onions
2-3 crushed garlic
1/2 cup shredded ginger
1/2 cup diced tomatoes (optional)
1 cup water
2 cans coconut milk
salt/pepper
raw chicken cut into bite sized pieces (I usually do about 3-4 breasts)
1. Saute onions, garlic, ginger, tomatoes in a litte oil
2. Add chicken and cook until brown on both sides (add more oil if too dry)
3. Add water, cover, and simmer until chicken is cooked through
4. Add cans of coconut milk
5. Add salt and pepper to taste, simmer covered 15-20 minutes
Poor over rice and enjoy!!
